Piadina romagnola
Italian flatbread
Piadina romagnola is a popular snack in between meals offered on many corners in Emilia Romagna. Quickly prepared at home, it tastes exquisite.
Ingredients (4 people):
530g flour
65ml olive oil
1.5 teaspoons of baking powder
140ml water
130ml milk
Salt
Prosciutto crudo
Slices of cheese
Preparation:
Stir flour, baking powder, water, milk and oil in a bowl and knead properly. Let dough rest for at least 30 minutes.
Split dough into little portions and roll into flatbread on work surface. Heat big pan with little oil and cut round, pan-sized flatbread from the dough. Fry piadinas on both sides until the bubbles become brown and crisp.
Put piadina on a plate; generously cover with ham, cheese or other selected ingredients of choice, shut and serve.
